Tender Gulf shrimp are marinated in zesty lemon juice and fresh homemade pesto, then grilled to perfection on skewers. This dish offers a vibrant burst of flavor, making it a delightful option for summer barbecues or a quick weeknight meal, especially when served with extra pesto for dipping.

Ingredients

  • 1-1 1⁄2 pounds large Wild Caught Texas Shrimp
  • Juice of 1 lemon
  • 1⁄2 cup pesto
  • Skewers for grilling

Pesto

  • 3 cups basil
  • 2 1⁄2 tablespoons pine nuts
  • 3 cloves garlic
  • 2⁄3 cup grated parmesan reggiano cheese
  • 2⁄3 cup olive oil
  • Salt and pepper to taste

Preparation

  • Add all ingredients for the pesto to a blender or food processor and blend until smooth.
  • Peel and devein shrimp. Rinse and pat dry.
  • In a bowl add shrimp, lemon juice, and pesto. Toss to combine. You can let marinade in the fridge for an hour but not necessary.
  • Add shrimp to the skewer and heat up the grill to a medium-high heat.
  • Place skewers on the grill and cook for 2-3 minutes per side until meat is cooked through.
  • Serve hot with additional pesto for dipping if desired.
