Pesto Shrimp Skewers
Tender Gulf shrimp are marinated in zesty lemon juice and fresh homemade pesto, then grilled to perfection on skewers. This dish offers a vibrant burst of flavor, making it a delightful option for summer barbecues or a quick weeknight meal, especially when served with extra pesto for dipping.
Serves 4.
Ingredients
- 1-1 1⁄2 pounds large Wild Caught Texas Shrimp
- Juice of 1 lemon
- 1⁄2 cup pesto
- Skewers for grilling
Pesto
- 3 cups basil
- 2 1⁄2 tablespoons pine nuts
- 3 cloves garlic
- 2⁄3 cup grated parmesan reggiano cheese
- 2⁄3 cup olive oil
- Salt and pepper to taste
Preparation
- Add all ingredients for the pesto to a blender or food processor and blend until smooth.
- Peel and devein shrimp. Rinse and pat dry.
- In a bowl add shrimp, lemon juice, and pesto. Toss to combine. You can let marinade in the fridge for an hour but not necessary.
- Add shrimp to the skewer and heat up the grill to a medium-high heat.
- Place skewers on the grill and cook for 2-3 minutes per side until meat is cooked through.
- Serve hot with additional pesto for dipping if desired.
